Ingredients:
1 ready-made pie crust
8 oz. tofu
½ cup sugar
1 tsp. vanilla essence
2 eggs
½ tsp. lemon juice
Method:
- Set aside the pie crust
- Mix all ingredients well, preferably with an electric mixer
- Fill pie crust with the mixture
- Bake at 350 F/180 C for 30 minutes.
- Check that the top is dry and, if it is, turn off the oven and leave the pie in the oven for another 30 minutes.
- Decorate as you wish.
Suggestions for decoration/flavoring:
- Cover with grated chocolate, or chopped chocolate confection (e.g. Viennese Crunch)
- Canned pie filling e.g. cherry, can be poured on top.
- Chopped fresh fruit – berries, sliced strawberries etc.
- When preparing the mixture, you can add cocoa, coffee or flavoring (mint, almond, etc.), liqueur, spirits.
- Pina Colada – add crushed pineapple and coconut to the mixture or use as a topping.
- Pecan pie – top with a thin layer of date syrup (silan) and chopped candied pecans.
- Almond tart – add almond flavoring to the mixture and top with a little honey and slivered almonds.

Parev (non-dairy) Cheese:
- Soak 200-250 grams cashew nuts overnight or for 6-8 hours.
- Drain.
- Using a blender, process the nuts with ¼ cup oil, 1 tablespoon cider vinegar, salt, pepper, your favorite herbs, some onion and/or garlic.
